PINOLE - A TRADITIONAL POMO FOOD.

THERE ARE A VARIETY OF SEEDS THAT ARE INCLUDED IN MAKING PINOLE.  PINOLE IS SPANISH WORD THAT REFERENCED WILDFLOWER AND GRASS SEEDS MEALS AND ARE INCLUDED IN PINOLE.  ALL FLOURS AND IN THE INDIAN DIET MADE BY POUNDING OR ROASTING THE SEEDS OF GRASSES.   THEY USED BUTTERCUP SEEDS RED MAIDS 30 KINDS OF SEEDS.  OTHER SEEDS USED IN IN PINOLE WERE: CALENANDRINA ELGENS, RANUNCULUS ESSENENIA. CEONOLUS, INTERSOMA.  TRIFOLIUM VESCENS. MADA DISSITFLORA,  MADIA DISSTIFLORA, AVENA BUTERUA, NEMIZONA BIZULAEFAUNA, WYETHIA LONGICAULIS, AND BOISED WALIA. DENSIFLORA SEEDS.

THEY PERCHED THE SEEDS IN A TIGHTLY COILED BASKET WITH HOT STONES TO REMOVE THE CHAFF.  THEN THE SEEDS WERE GROUND INTO A MEAL.  THEY MAY SHAPE INTO A BALL OR USE IT LIKE OUR GRANOLA BAR OR TEHUL ( ELYMUS TERITICIDES) IS THE GRASS THAT YUKIS USE IN PINOLE.
